Craving simple ways to get into the fall feeling without spending your entire afternoon by the oven? Or want to feel the spice of pumpkin on a crisp fall morning? No need to make a trip to an orchard or to a coffee shop, here are three quick and simple fall recipes to spice up the season! 

Pumpkin Dip:

A party favorite and definitely one to be used throughout the week when you need a quick fall pick me up! 

What you need:

1 can of 100% pumpkin

1/4 tsp cinnamon

1/4 tsp pumpkin spice

1 tsp salted caramel maple syrup

3/4 cup brown sugar

6 oz container of plain Greek yogurt

8oz container of light cool whip

Make it:  

Mix the pumpkin, cinnamon, pumpkin spice, salted caramel maple syrup and brown sugar together. Then mix in the Greek yogurt (we used Fage 2% for this recipe!) and fold in the light cool whip. Then let it chill in the fridge for about an hour. We recommend pairing this with graham crackers or sliced apples for a quick fall treat! 

Apple Cinnamon Oats:

Need a quick and easy prepared breakfast? Try this recipe for overnight oats! Make it the night before for an easy breakfast on the go!  

 

What you need:

1/3 cup of the plain old fashion oats

1/2 tsp cinnamon

1/2 an apple diced

1/2 cup milk of your choice

1/12 tsp of salted caramel maple syrup

1/2 cup plain Greek yogurt

Make it:

Pour the oats (we used gluten free for this recipe!) with the cinnamon, your choice of milk, salted caramel maple syrup, Greek yogurt (we used Fage 2% for this recipe!) and apples (feel free to peel them if you’d like!) into a mason jar or container of your choice. Put this in the fridge overnight and simply mix them together in the morning for a tasty and nutritious breakfast to go! 

Pumpkin Cookies 

 

What you need:

2¾ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1¼ teaspoons kosher salt

1½ teaspoons ground cinnamon

1¼ teaspoons ground ginger

¾ teaspoon ground nutmeg

6 ounces unsalted butter

2¼ cups light brown sugar

2 eggs

1½ cups canned pumpkin

¾ cup half-and-half

1 teaspoon vanilla extract 

Make it:

First mix the dry ingredients together. Then add the wet ingredients to the mix. Preheat the oven to 375 degrees and bake for 14 minutes. This makes 24 cookies but you can always cut the amounts in half to make how many you desire!

Don’t forget the icing! We recommend this yummy brown butter icing to top these fall favorites!

What you need:

4 cups powdered sugar

10 tablespoons unsalted butter

¼ cup plus 1 tablespoon half-and-half

2 teaspoons vanilla extract

Make it:

Place the sugar in the bowl and add the melted butter. Then add the rest of the ingredients and mix. 

Grab some warm apple cider and a flannel and have yourself an autumnal afternoon!
